The menu at Pezzella’s is simple. Less is more is our approach. If the ingredients are good quality they will provide a world of flavor without over complicating a dish. Often in Italy you will hear the phrase ‘fatto a mano’, or hand-made. This is a core concept to us – to hand make a dish is not only highly satisfying watching one thing be transformed into a new form, but also if you are present for each stage of its creation you know exactly where it came from and exactly what went into it. Italians have such a strong connection with food and with cooking due to this, and are highly passionate and proud of what they produce. We strive to always be proud of what we produce, from a loaf of bread to a Tiramisu – we’ve harnessed what we have learnt in Italy to re-create an authentic taste of Italy right here in Forster.

We change the menu seasonally to do our best to align with what is available naturally. Here in the Great Lakes we are so fortunate to have a plethora of local sustainable and organic growers, providing amazing produce from crazy mushrooms to Italian water buffalo cheeses. Of course there are some things that quite frankly Italians just do best. We import Italian San Marzano tomatoes for example. They grow on the volcanic soils of Mt Vesuvius in Napoli, a flavor comes through these tomatoes that just cannot be mimicked and are quintessential for creating ‘la vera pizza Napoletana’. A blend of old Italian traditions and flavors, fused with the tastes of the Great Lakes.
